INSTALLATION
For the installation inside a professional space, the following are required:
Compliance with building coverage regulation.
A calibrated chimney.
Sufficient ventilation of the installation area to prevent re-inhaling smoke.


DESCRIPTION
IRIS F 80 is a professional wood-fired oven, available either on a stable metallic base or with wheels, depending on the client’s preference. It is designed for pizzerias, restaurants and bakeries.
Dry wood is used as fuel.


TECHNICAL CHARACTERISTICS
Internal diameter of the oven chamber: 80 to 85 cm
External diameter: 117 to 120 cm
Height (excluding the base): 120 cm
Firebricks have been used for the dome and perimeter, in various sizes
For reference, the thickness of the bricks placed perimetrically is 12 cm
The firebricks are bonded with special heat-resistant mortar
Refractory baking slabs of 5 cm thickness
5 cm ceramic fibre insulation and perlite concrete are used as insulation
The oven door is made of cast iron
Rust-resistant chimney stack with a diameter of 250 mm
Maximum operating temperature: 450 degrees Celsius
Total weight: approximately 1200 kg

FIRST BURN
During the first burn the temperature must not remain stable during 2 hours at 150 degrees Celsius, but without exceeding this temperature. On the second day the temperature can increase by 50 degrees Celsius, again remaining stable for 2 hours. The temperature can continue increasing by 50 degrees each consecutive day, until reaching the 450 degrees Celsius, which is the maximum operating temperature.

During the first burns it is possible to notice humidity marks on the cast iron oven door. Use a protective heat-resistant glove and a clean cloth to wipe any traces of humidity.


USE
Choosing the fuel
Use thinly split beech or oak wood.

For proper and complete combustion, the wood’s humidity must be less than 20%.

Wood pieces that have undergone any kind of chemical processing (MDF, plywood, pieces painted or varnished), as well as wood that contains resins (e.g., pine) must not be used as fuel.

Burn preparation
Place small, dry branches in the centre of the combustion chamber.

You can place them directly on the cooking surface, but better results can be acquired by using a special metallic support.

On top and around the small branches, place small split wood pieces in the shape of a pyramid.

Use paper, dry grass, or eco friendly kindling. Avoid the use of flammable liquids.

Fire-starting procedure
Light the pyramid leaving the oven door half open to ensure good oxygen flow.

Add wood gradually, without overloading.

It takes approximately 40 minutes to reach 350 degrees Celsius.

Tips for optimal burning
Using an excessive amount of wood can impede combustion and, consequently, produce a large amount of smoke.

Coals
When the desired temperature is reached, move the burning coals to the edges of the cooking surface using protective gloves and the appropriate tools.

Forceful opening of the oven door during this phase will cause a drop in temperature and the release of smoke.

 

MAINTENANCE
With every use of the oven:
Use kindling without chemicals and dry wood.

Do not overload the oven with wood – allow air to circulate for optimal burning.

Wait patiently until the oven reaches the required temperature, depending on what will be baked.

Before each burn, remove any remains from previous usings.

Check the chimney for possible deposits and clean it every 2-3 months.

Visually check the dome, the baking slabs, and the firebricks.

The use of liquid fuel is considered inappropriate, as it can produce an excessive amount of smoke and cause irreparable damage to the oven (to the dome, the bricks placed around the perimeter, and the baking surface).

If the oven is used outdoors, it must be protected it from weather conditions.


SAFETY
Use protective gloves and appropriate tools.

Do not touch the metallic parts while using the oven or while turning it off, due to the high risk of burns.

Sufficient ventilation of the area is necessary.

Only wood can be burnt in the oven.


WARRANTY
The oven is covered by a 2-year warranty for any manufacturing defects.

The warranty does not cover damages caused by improper use, such as exceeding the maximum temperature, impacts, or insufficient maintenance.
